What is half cooked chapathi?

Half cooked chapathi (also called par-cooked chapathi) is made from fresh dough that's been rolled and cooked on a tawa to about 60–70% doneness. The proteins in the dough set, the raw flour taste is gone, but the chapathi hasn't fully puffed or developed its final texture. It's typically refrigerated (not frozen) and has a shelf life of 2–3 days at 4°C.

To finish: place on a hot tawa or skillet for 30–45 seconds per side. It puffs, softens, and is ready to serve. No defrosting. No guesswork.

What is frozen chapathi?

Frozen chapathi is either fully or partially cooked chapathi that has been blast-frozen and kept at -18°C. Shelf life extends to 30–90 days depending on the manufacturer. It requires defrosting before use (or careful microwave thawing) and often contains stabilisers or dough conditioners to survive the freeze-thaw cycle without breaking apart.
